Instructions

To make mamak-style fried chicken, first mix the garlic, turmeric, curry powder, chilli powder, and ground coriander in a bowl. Add the soy sauces and oil, and stir until everything is combined. Then, add the chicken pieces and mix until they are completely covered with the marinade. Cover the bowl and place it in the refrigerator for at least 2 hours.

When the chicken is done marinating, remove it from the refrigerator and let it come to room temperature. Place the cornstarch in a shallow dish and dredge the chicken pieces in the cornstarch, making sure each piece is completely coated.

Frying

Heat oil for deep-frying in a wok or deep-frying pan.
